Handia is a traditional fermented rice beer enjoyed by the tribal communities of Jharkhand, Odisha, Chhattisgarh, and West Bengal. It’s known for its refreshing taste, cultural significance, and potential health benefits.
Ingredients for Handia
- 3 cups rice (preferably parboiled or sticky rice for better fermentation)
- 5-7 ranu tablets (a traditional herbal fermentation starter)
- Water (as required)
How to make Handia:
Step 1: Prepare the Rice:
- Wash the rice thoroughly to remove excess starch.
- Cook the rice with just enough water so that it’s soft but not mushy.
- Once cooked, spread the rice on a clean cloth or tray to cool completely. This step is crucial as adding Ranu tablets to hot rice may kill the fermentation agents.
Step 2: Prepare the Fermentation Mixture:
- Crush the Ranu tablets into a fine powder.
- Once the rice has cooled, mix the powdered Ranu evenly with the rice.
Step 3: Fermentation Process:
- Transfer the rice mixture to an earthen pot or a clean container.
- Cover the pot with banana leaves or a clean cloth to allow airflow while protecting it from dust.
- Leave the mixture to ferment for 3 to 5 days in a cool, dark place. The longer it ferments, the stronger the flavor and alcohol content.
Step 4: Extract the Liquid:
- After fermentation, strain the mixture through a fine cloth or sieve.
- Collect the liquid in a separate container — this is your Handia. It’s typically enjoyed cool and fresh.
